Shrimp Scampi

Being of 1/4 Sicilian heritage, and being born in Sicily, I know good food. I only eat shrimp 3 ways: chilled, raw, shelled, deviened, tail on, is one way?deep fried/breaded in peanut oil is another way and lastly, in a scampi sauce, also known as shrimp scampi.

Below you will see my recipe for shrimp scampi over linguini, but as with all my recipes, you can substitute as your taste buds demand. And as always, I understand most of us are on diets, or trying to control our intake of certain ingredients, such as butter, salt and other less healthy items I may or may not use in these recipes. I suggest you substitute my ingredients for your less fattening more healthy ingredients. There should be not much of a difference in taste by substituting ingredients, and the payoff is your weight/health goals will be achieved while allowing yourself to enjoy good dishes.

For the pasta, put a large pot of water on the stove to boil. When it has come to the boil, add a couple of tablespoons of salt and the linguini. Stir to make sure the pasta separates; cover. When the water returns to a boil, cook for about 6 to 8 minutes or until the pasta is not quite done. Drain the pasta.

Meanwhile, in a large skillet, melt 2 tablespoons butter in 2 tablespoons olive oil over medium-high heat. Saute the shallots, garlic, and red pepper flakes (if using) until the shallots are translucent, about 3 to 4 minutes. Season the shrimp with salt and pepper; add them to the pan and cook until they have turned pink, about 2 to 3 minutes.

Remove the shrimp from the pan; set aside and keep warm. Add wine and lemon juice and bring to a boil. Add 2 tablespoons butter and 2 tablespoons oil. When the butter has melted, return the shrimp to the pan along with the parsley and cooked pasta. Stir well and season with salt and pepper. Drizzle over a bit more olive oil and serve immediately.

Now as I said above?.if linguini ain?t your favorite pasta, use what floats your boat. Shrimp Scampi usually goes well over any pasta from angel hair to elbow macaroni. It also is stunningly good over crusty french bread. Take some fresh from the bakery french bread, bake it to a crusty goodness in a 450 degree over for 7 minutes, remove and pour this Shrimp scampi recipe over the crusty french bread?.
