I get sent a good number of cookbooks (solicited and not) for review on this blog. When I say yes to a publisher's offer to send me a book, it's because I think it has potential to be of interest to you. I always intend to test 2-3 recipes from the book and write a review if it turns out to be worth recommending.

But a lot of the time, it's a struggle to find time to test recipes from cookbooks, especially when I read about so many recipes in other blogs each day. And, to be honest, if the recipes require a lot of time or fancy ingredients, or just don't appeal to me greatly, the book isn't going to make it far in my kitchen.

That makes "Peas and Thank You: Simple Meatless Meals the Whole Family will Love" (Harlequin, $21.95) stand out. Within two weeks of acquiring it, I had made nine of the recipes in the book and bookmarked several more. This past weekend, I went on a cooking frenzy and ate nothing but "Peas and Thank You" recipes.

It's funny, too, because it's a vegetarian cookbook with vegan options for every recipe. I am neither of those things, yet the majority of the cookbook is extremely appealing to me ? I guess mouthwatering photos of simple recipes with fresh, healthful ingredients just lure me in.

They're the kind of recipes that make me think, "I can make that! Right now!" Easy hummus and Swiss grilled wraps, Waldorf salad (see this post) with a light 3-ingredient dressing, preservative-free granola bars and lentil enchiladas (half without cheese and olives for Husband Peter) are just a few of the recipes I tried.

And although I'm not entirely against tofu and tempeh, I could easily swap in chicken or bacon (naughty) in the recipes that include meat substitutes. But most of them use good old grains and beans and lentils where you'd normally see meat.

The book is also an entertaining read to browse over breakfast or while enjoying those tasty granola bars. Author Sarah Matheny (a.k.a. Mama Pea) writes endearing intros to each recipe, maintaining her quick-witted blog style and sharing just enough slices of life in the Pea household to make you feel like you're best friends. Adorable pictures of her two little girls don't hurt either.

My one complaint is the same complaint I have with almost every paperback cookbook: It doesn't stay open very easily. This is where makeshift paperweights or a cookbook stand come in handy.
