Honey - camille No oil to fool with, just chicken, butter, some spices, mustard, and honey; making this chicken dinner easy and delicious.

Whether baked or fried, this honey chicken recipe is perfect for a week night meal or a family gathering. Serve along side cream corn and honey cornbread, and this is a mouth watering meal that no one will push aside.

Frying chicken is not hard, especially when all that needs to be done is a little prep and placing in the oven. No oil splatter to clean, and no pans to scrape.

Put the stripes on the roast rack. Pour the remaining honey over the chicken. Cook for 30 minutes (until 160° and golden), turning half way through.

These stripes would be great in a wheat wrap served with sweet potato fries. Children can enjoy these with some honey on the side for dipping, or some honey ketchup (mix 1 teaspoon honey into 1 tablespoon ketchup).

Using the same ingredients as above, minus the flour mixture, This is a deliciously easy chicken recipe. The best part, any leftovers can be used in a salad and the glaze can be used as a dressing (recipe follows).

Make a small cut in the thickest part of the cut chicken, but do not cut all the way through. Using a 1/2 teaspoon, place some butter into the hole. Then coat with another 1/2 teaspoon on the outside.

Put chicken into the pan. Once all the pieces are in, pour the remaining honey mix into the pan. Cover with tin foil and cook for 45 minutes to an hour, or until a meat thermometer reads 160°.

Serve this with some store bought honey cornbread (before placing in oven, put 4 tablespoons butter across the top and drizzle with honey), and corn on the cob. For a great leftover or lunch, turn into a salad.

Toss leftover shredded honey baked chicken (recipe above), crumbled honey cornbread, grape tomatoes, walnuts, romaine lettuce or mixed greens, and honey mix together in a salad bowl. If desired, mix some more honey and honey mustard together.

This is a good meal no matter what time of year. The leftovers can be turned into two or three meals, and save time and money for the rest of the week.
